At 7th Door, chef Kim Dae-chun invites diners to delve into the intricate world of Korean flavours through the art of fermentation and ageing, blending traditional Korean techniques with modern culinary creativity to create complex, layered flavours. The restaurant’s innovative approach is evident in dishes such as seaweed-wrapped rice topped with luxurious caviar, Korean beef steak accompanied by a fermented hairtail fish sauce, daechunkim rice wrapped in salted kimchi and topped with caviar, seasonal raw fish with a special sauce, and ganjang gejang soy sauce-marinated raw blue crab. Located at the entrance of the restaurant, the ageing refrigerator showcases about 40 types of fermented foods made on-site, giving diners a chance to explore before their meal.
